We walk the walk

At Milk Pail we’re going back to our roots as a “micro” milk processor, and at the same time we’re helping to establish a sustainable dairy farm in the town of Orland (on the road to Redding, roughly a 90 minute drive from Sacto).

We bought a herd of 24 cows, and our friend Paul cares for them, pasteurizes their milk, and makes a soft (and wonderfully rich) Fromage Blanc that finds its way into our Tre Formaggi Ravioli and limited-edition Cheesecake.
