Most Milk Pail customers know that living cheese is a very complex food. Cheeses from Cows, Goats or Sheep develop wonderful flavors because of microscopic organisms in the milk curd slowly altering the proteins, fats, acid, lipids, and a whole universe of other things. As cheese ages, it will change. The texture of a cheese will harden as moisture evaporates if it is a Parmesan style cheese. If it is a soft ripened cheese, it will become softer and runny as the butterfat slowly loses its grip on the natural moisture. Coloring of a goat cheese will change inside from snow white to a deep golden hue as it ages. The outside of the goat cheese will usually begin growing small patches of very fine mold. An example of a cheese that is alive! With a small paring knife, trim off small amounts of the surface of moldy cheeses.
